 Okinawan Spare Ribs

Post Okinawan Spare Ribs
Ingredients:

3 lbs. lean spareribs
2/3 cup sugar
1/3 cup sake (Japanese rice wine)
2/3 cup soy sauce

Cut spareribs into 2x2 in. pieces. Place in saucepan and add enough water to cover the ribs. Cover and simmer until the spareribs are tender. Drain all except for about 1 cup of liquid from the spareribs. Next, add the sake and sugar. Cook, uncovered, until the liquid reduces to about half. Add the soy sauce and cook until most of the liquid is gone, turning the spareribs periodically to glaze.
